To see Opportunity related menus under Organization level > Admin > Categories, ensure your user role has necessary permissions.

To enable the menus:

  1. At the organization level, click the Admin icon. Navigate to Organization > Security Roles.

  2. Select a role from the Manage Security Roles list view.

  3. Go to the Permissions tab.

  4. Expand Administrator.

  5. Scroll down to Opportunity Properties settings.

  6. Select the Add or Edit checkbox.
    The user with the security role you gave permissions to, will now be able to see the menus.
